The Bleu Barn Bistro is a Farm to Truck Food Truck that specialize in serving locally-sourced meat and produce from farms that are committed to producing pesticide and hormone free produce as well as grass fed and free range beef and chicken. They cater to all dietary restrictions, including gluten intolerance, Paleo and Primal to name a few.
Bleu Barn Bistro began as the love child of Chef Tara Diamante and Chef Brenton Ebersold in May of 2014. Both Chefs have always enjoyed the seasonality of food and the freshness that this area has to offer. After meeting at Johnson & Wales in late 2008, they kindled a complimentary cooking style along with a vast variety of techniques and expertise.
We had the pleasure of chatting with Chef Tara Diamante, one of the Owner and pulse behind Bleu Barn Bistro and here’s what she have to say on the questions we have asked her.
How long have you been in business? I’ve been in the business for 2 years on June 10.
What do you love most about being your own boss? I get to have one on one connections with my customers. I get to help them create special events, and I get to see the joy on their faces when they love our product.
What makes Charlotte so special? Charlotte is an amazing growing city. The food and beverage atmosphere is always growing, changing, and astonishing me. I love that I get to be a part of such a great culinary community. Plus the city itself is great. There is always something fun to do, the people are kind, and it’s a beautiful city to explore.
Have you always wanted to own your own business? Not really sure. I try to let each day take me where it goes. Owning my own business was just the next chapter in my life. It was been one crazy and fun chapter though. I can’t wait to see where it takes me next.
For someone visiting Charlotte, what is the one must see? That is a hard one to narrow down. I love so much of our city. I would say you must take a stroll through uptown. See a little bit of Charlotte’s history, the Panthers Stadium, BB&T Ball Park, our wonderful parks, and so much more in such a small area or people can take a brewery tour. We have such great neighborhoods with small, pet /kid friendly breweries that are an awesome to hang out. They have great patios and almost always have a local food truck parked on the site, like Bleu Barn Bistro.
What is your favorite local restaurant? Custom Shop and Good Food on Montford.
Do you see yourself opening another branch on other locations? We don’t see ourselves opening another location, however we are expanding more into catering. We already offer catering from the food truck, but we would love to offer other types of catering services. We currently moved into our own new commissary space which will give us the space we need to make this next step happen.
Why do your customers stay or do repeat business with you? Because the love and care we put into our work. We take a lot of time to source out the best local and seasonal product, which in turn makes our food super fresh and delicious. On top of good food, we pride ourselves in customer service. We take the time to get to know our customers, and their wants and needs. We know a lot of our regulars by name and what they like to eat.
To what do you attribute your success? I attribute my success to everyone around me, and everyone who has helped me along my path so far. I try to take something from every person I meet. I specifically attribute my success to my fiancé, mother, grandma, sister, professors at culinary school, and chefs I got to work under and learn from.
What do you look for in an employee? Dedication, attention to details, and fun to be around. Our company is very small, and customer service based and I need an upbeat professional employee who represents my company as if it is their own and they have to be fun to be around. We spend a lot of time together.
What is unique about your business? Currently our food truck team is all women. People are always surprised when they see us kicking butt and keeping up with all the other men run food trucks around us. We work just as hard in this hot, heavy lifting, very long day industry as anyone around us. I think having women in the truck gives it that extra little touch. We have cute flower pens, our trailer is light blue and adorable, we write our regulars cute little notes on their to go boxes, and everything is clean and presented well.
What are your responsibilities as the business owner? The list is endless: menu development and planning, customer relations, booking events, booking keeping, location scouting, human resources, product sourcing, prepping, cleaning, daily service, and so much more. I don’t expect my employees to do anything I won’t. We are a team and I am out there every day working just as hard as my team.
The Bleu Barn Bistro is definitely a great Food Truck to check out. A food truck that’s serious about delicious food that supports local farms and vendors. You will surely get what you pay for.
